Homemade Soft Pretzels with Coarse Grey Celt Salt

Ingredients:

  • 1 ½ cups warm water (110°F/45°C)

  • 1 packet (2 ¼ tsp) active dry yeast

  • 4 cups all-purpose flour

  • 2 tsp kosher salt

  • 4 tbsp unsalted butter, melted

  • 10 cups water

  • 2/3 cup baking soda

  • Coarse Grey Celt Salt (for sprinkling)

Instructions:

  1. Activate yeast:
    In a large bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until foamy.

  2. Make dough:
    Add flour, kosher salt, and melted butter to the yeast mixture. Mix until combined, then knead on a floured surface for about 8-10 minutes until smooth and elastic.

  3. First rise:
    Place dough in a lightly oiled bowl, cover with a clean towel, and let rise in a warm place for about 1 hour or until doubled in size.

  4. Preheat oven:
    Preheat your oven to 450°F (230°C). Line baking sheets with parchment paper and lightly grease.

  5. Prepare baking soda bath:
    In a large pot, bring 10 cups of water and the baking soda to a boil.

  6. Shape pretzels:
    Punch down the dough and divide it into 8 equal pieces. Roll each piece into a 20-inch rope, then shape into a pretzel.

  7. Boil pretzels:
